Have to say Ducking and Dodging.

Parrying is awesome, especially as it can lead into attacks, but I think Ducking and Dodging takes that one step further, letting you weave around your enemies strikes to counter attack. Really opens combat up a lot more, and makes fighting someone who knows how to use such mechanics bloody hard, as it should be.
